Ingredients

  • Spinach 60gms

  • Mung beans 104gms

  • 1x large onion sliced (331gms)

  • Olive Oil 2 tbsp (30gms)

  • Paprika 1/2 TSP (1gm)

  • Salt and Pepper to taste

  • Garlic minced 1-2 cloves

Directions

  • Heat the oil in a saute pan over medium heat. Add garlic and saute for a minute but do not let it brown. Add the onion and saute it for 5 minutes until it’s translucent, adding a tablespoon or two of water to prevent it from sticking, if necessary.
  • Add the mung beans and cook for another few minutes. Add the spinach. Cook until it’s wilted.
  • Add some salt and pepper to taste. Garnish with paprika. Serve hot.
