Broccoli, Tomato, and Mushroom Fry-up

Broccoli 300g
Cauliflower 300g
Cherry Tomatoes 250g
Mushrooms 250g
Yellow Pepper x1
Celery sticks x3
Spinach x1 cup
Kale x1 cup
Onion x2 medium
Garlic x3
Ginger 1 TBSP
Olive Oil 2 TBSP
Turmeric 1/2 TSP
Salt and Pepper to taste
Directions
- Fill a saucepan with water and bring to boil.
Add the broccoli and cauliflower. Cook for 3 minutes, then drain. - Meanwhile, heat the oil in a wok or large non-stick frying pan and fry the garlic for a minute but do not let it brown. Add the garlic and onion and saute it for 5 minutes until it’s translucent, adding a tablespoon or two of water to prevent it from sticking, if necessary. Add the turmeric.
- Add the yellow pepper, celery, mushrooms, and tomatoes. Saute the ingredients for 5 minutes before adding the broccoli and cauliflower. Mix all the ingredients a bit more then add the kale and spinach. Cover the pan and turn off the fire. Add salt and pepper to taste.
