Ingredients

  • Bell pepper x1 medium 120g

  • Tomatoes x2 medium 250g

  • Olive oil x1 tbsp

  • Apple cider vinegar x2 tbsp

  • Salt and pepper to taste

  • Oregano 1/2 tsp

  • Walnuts x15g

Directions

  • Chop bell pepper and tomatoes. Place into a bowl.
  • Pour in olive oil and vinegar if adding. Season with salt and pepper, and oregano. Toast gently to coat
  • As a topping add walnuts
  • Refrigerate until ready to serve. Enjoy!
